For a fan (convection) oven, reduce the conventional temperature by about 20 °C (25 °F) or drop one gas mark, because circulating air heats food more efficiently.

How to convert oven temperatures
Worked example: converting 400 °F gives (400 − 32) × 5/9 = 204.4 °C, which every chart rounds to the practical setting of 200 °C — gas mark 6, or 180 °C in a fan oven.
Why fan ovens need a lower setting
A fan (convection) oven circulates hot air, so heat transfers to food faster and more evenly than the still air of a conventional oven. At the same dial setting, food browns quicker and can dry out. Reducing by about 20 °C — or dropping one gas mark — brings a fan oven back in line with a recipe written for a conventional one. Some manufacturers suggest keeping the temperature and shortening the time instead; both approaches work, but changing the temperature is more predictable for baking.
What gas marks actually are
The gas mark scale is used on gas cookers in the UK, Ireland and parts of the Commonwealth. Each whole mark is roughly 25 °F (about 14 °C) apart, starting near 275 °F at mark 1, with fractional marks ¼ and ½ below that for very low heat. Because the scale is a set of steps rather than a continuous readout, gas conversions are always approximate.
Ovens lie — and that matters more than rounding
Independent testing consistently finds domestic ovens running 10–20 °C above or below their dial, and temperatures vary between the top and bottom of the same oven. That real-world error is larger than any rounding in a conversion chart, which is why experienced bakers rely on an inexpensive oven thermometer and on visual cues rather than trusting the dial precisely.
Baking versus roasting
Precision matters most in baking, where structure depends on heat: cakes, breads and pastries respond visibly to a 10–20 °C error. Roasting vegetables or meat is far more forgiving — a modest difference mainly changes browning and timing rather than ruining the result.
